Why Sourdough Starter and Eggs?
I don't think there's any coincidence to having a sourdough starter and backyard chickens. Sourdough starter is often the one thing that starts people off to wanting a full blown homestead!
I live on a small farm, so we have lots of different animals, grow our own veggies, have chickens and of course I make all of our bread and baked goods using my trusty homemade sourdough starter (you can find my recipe for making a sourdough starter here).
One thing I love about sourdough starter is that it has this uncanny way of working its way into almost everything we do (you can add sourdough discard to almost any recipe). From baking amazing sourdough bread and of course don't forget the sourdough discard recipes - to fertilising my plants with sourdough starter and even feeding discard to my chickens! My chickens absolutely love eating sourdough discard.
So I felt it was kind of fitting to put together a collection of sourdough recipes that use lots of eggs. In a cycle of life kind of way, my chickens actually eat lots of sourdough discard, as well as all our food scraps, so sometimes they will eat the leftovers of these egg based sourdough recipes.

Nutritional Benefits of Eating Eggs
Eggs are not only delicious but also pack a powerful punch of nutrition! These versatile little gems are a fantastic source of high-quality protein, essential for building and repairing tissues in our bodies.
They're also rich in important vitamins and minerals like vitamin D, which supports bone health, and choline, crucial for brain function and development.
Plus, eggs contain antioxidants like lutein and zeaxanthin, which promote eye health and reduce the risk of age-related macular degeneration.
With their unbeatable combination of nutrients, eggs are a nutritious addition to any meal, especially when paired with the nutritional powerhouse of sourdough starter!

Role of Eggs in Baking
Eggs play a multifaceted role in both baking and cooking, lending their unique properties to a wide array of dishes. In baking, eggs act as binders, holding ingredients together and providing structure to baked goods like cakes, cookies, and bread.
They also contribute to the texture and moisture of these treats, resulting in tender and moist finished products. In addition to their binding properties, eggs serve as leavening agents, helping baked goods rise and achieve a light and fluffy texture (just like they do when making a Dutch Baby pancake or popovers).
Beyond baking, eggs are prized for their versatility in cooking, where they can be fried, scrambled, poached, or boiled to create a myriad of savory dishes.
Their ability to emulsify ingredients makes them invaluable in sauces, dressings, and custards, adding richness and creaminess to these preparations. Whether sweet or savory, eggs are an essential ingredient in the culinary world, bringing flavor, texture, and structure to a wide range of dishes.
