Sourdough Garlic Bread Recipe

This delicious homemade sourdough garlic bread is the perfect side dish to any Italian meal ... and is in fact a good idea at any time of the day! Use up stale sourdough or bake a loaf especially for this recipe.

Ingredients
  

  • 1 Head of Garlic approx. 5 to 8 cloves
  • 2 Small Sourdough Loaves around 400g per loaf is perfect
  • 240 g Soft Butter unsalted
  • 2 tbsp Fresh Parsley finely chopped
  • 5 g Salt
  • 40 g Parmesan Cheese shredded

Instructions
 

Roasting the garlic

  • Slice the top of the head of garlic off with a sharp knife, exposing the cloves. Pour olive oil and salt over the head of garlic and roast in the oven for around 30 minutes at 200C/392F.

  • While the garlic is roasting, you can get on with the other steps.

Making the garlic bread

  • Slice each loaf of sourdough into 1cm thick slices without slicing it all the way through, so the slices are still attached at the bottom.

  • Into a bowl, add the butter, chopped parsley, salt, 20g of parmesan and cooled roasted garlic.

  • Use a fork to mash the garlic into the butter until it's all really well combined.

  • Use a butter knife to spread the roasted garlic butter onto the slices of sourdough bread. Be generous with the butter and make sure there's plenty of butter in each gap - and don't forget to spread a little on top too!

  • Place each sourdough garlic loaf onto a large sheet of aluminium foil. Sprinkle remaining 20g of parmesan cheese over each loaf and wrap them in aluminium foil.

  • Place into the oven and bake at 180C/356F for around 15 minutes.

  • Take the loaves out of the oven, open the foil a little and put back in for around 5 minutes to allow the parmesan to brown and bubble.
  • When you are ready to serve, take the loaves out of the aluminium foil and sprinkle with chopped chives or more parsley.

Notes

Garlic - for the best results, I recommend using roasted cloves of garlic. If you don't have fresh garlic to roast, you can use minced or crushed garlic from a jar or even garlic powder as a substitute.
