The Best Sourdough Garlic Bread You'll Ever Eat

Just when you thought you couldn't get any better than freshly baked sourdough bread, along comes homemade sourdough garlic bread!

The secret to this sourdough garlic bread is the fresh roasted garlic - and the delicious homemade sourdough bread of course! You can even use your own homemade butter if you'd like to!

You really make this cheesy sourdough garlic bread with any loaf of sourdough bread you make - I've put some suggestions for making the perfect loaf a little further down.

You can make this sourdough garlic bread for any ocassion - it makes the perfect side dish to so many things! Your favorite salad, soup, pasta dish or sourdough pizza - take it to a bbq or potluck. Just make it - I promise you'll love it!

Which Sourdough Bread To Use?

You really can use any type of sourdough bread you like, even store bought if you don't have a chance to bake your own.

But there are a few loaves I recommend that work best with this recipe:

  • Sourdough Baguettes - for a restaurant style sourdough bread, try making it with sourdough baguettes. You can either slice them in half length ways for larger slices or into an accordian.
  • Sourdough Pane di Casa - for a quick, easy homemade loaf for sourdough garlic bread, why not make this sourdough pane di casa recipe into two smaller loaves (this is what I've done for this recipe). I made each loaf just under 400g and baked them together in a cast iron loaf pan.
  • Simple Sourdough Bread - this classic sourdough bread works perfectly for homemade garlic bread. You can make one big loaf, or make smaller batards.
  • Small Batch Sourdough Bread - these smaller loaves of sourdough bread are a lovely size for garlic bread.

How To Make Sourdough Garlic Bread

The process for making homemade sourdough garlic bread really is simple. Perhaps the hardest part is making the actual bread component.

I highly recommend taking the time to roast the garlic though, it makes all the difference to this delicious sourdough side dish.

Here's how to make sourdough garlic bread:

  1. Slice each loaf of sourdough into 1cm thick slices without slicing it all the way through, so the slices are still attached at the bottom.
  2. Into a bowl, add the butter, chopped parsley, salt, 20g of parmesan and cooled roasted garlic (see recipe card for instructions on how to do this).
  3. Use a fork to mash the garlic into the butter until it's all really well combined.
  4. Use a butter knife to spread the roasted garlic butter onto the slices of sourdough bread. Be generous with the butter and make sure there's plenty of butter in each gap - and don't forget to spread a little on top too!
  5. Place each sourdough garlic loaf onto a large sheet of aluminium foil. Sprinkle remaining 20g of parmesan cheese over each loaf and wrap them in aluminium foil.
  6. Place into the oven and bake at 180C/356F for around 15 minutes.
  7. Take the loaves out of the oven, open the foil a little and put back in for around 5 minutes to allow the parmesan to brown and bubble.
  8. When you are ready to serve, take the loaves out of the aluminium foil and sprinkle with chopped chives or more parsley.

Why Roasted Garlic?

Roasting garlic makes it softer, sweeter and almost caramelised. It has a much milder flavor than raw garlic, making it the perfect choice for sourdough garlic bread.

What Else Can You Add To Sourdough Garlic Bread?

This sourdough garlic bread recipe is perfect just as it is, but if you want to give it a little extra ... or just use what you have on hand, here are few ideas!

  • Add other fresh herbs to the garlic butter - fresh rosemary, thyme, chives and basil work really well.
  • You can top the garlic bread with any type of cheese you like for a "cheesier" bread - cheddar or mozzarella work really well!
  • For even more goodness, top your garlic bread with marinara sauce and extra mozzarella for a pizza twist on this garlic bread fave!

Ingredients  

  • 1 Head of Garlic approx. 5 to 8 cloves
  • 2 Small Sourdough Loaves around 400g per loaf is perfect
  • 240 g Soft Butter unsalted
  • 2 tablespoon Fresh Parsley finely chopped
  • 5 g Salt
  • 40 g Parmesan Cheese shredded

Instructions 

Roasting the garlic

  • Slice the top of the head of garlic off with a sharp knife, exposing the cloves. Pour olive oil and salt over the head of garlic and roast in the oven for around 30 minutes at 200C/392F.

  • While the garlic is roasting, you can get on with the other steps.

Making the garlic bread

  • Slice each loaf of sourdough into 1cm thick slices without slicing it all the way through, so the slices are still attached at the bottom.

Notes

Garlic - for the best results, I recommend using roasted cloves of garlic. If you don't have fresh garlic to roast, you can use minced or crushed garlic from a jar or even garlic powder as a substitute.

  1. Have you tried prepping this and keeping it in the fridge for a couple days prior to baking? Or would that make the bread too soggy?

    1. The prepped bread freezes really well! I haven't kept it in the fridge though, but you can definitely freeze and even bake from frozen with a good result.
