Whipped Brie Butter

Creamy, dreamy double brie whipped together with pure butter and topped with runny honey and chopped pecans ... and served with crusty sourdough bread of course! The ultimate dreamy indulgence!

Ingredients
  

  • 225 g Butter (salted is best)
  • 250 g Brie (rind removed)

Optional Toppings

  • 30 g Honey (runny honey is best)
  • 50 g Pecans (roughly chopped)

Instructions
 

  • Take the butter out of the fridge around 10 minutes before you want to make this recipe.
  • While the butter is softening, take a sharp knife and cut the rind off the Brie (it doesn't matter whether you use a larger wheel or 2 smaller wheels, as long as it weighs 250g).
  • Once the butter has softened a little, chop the butter and Brie into chunks and add it all to your food processor (don't try this in a stand mixer as it's not strong enough to whip the Brie).
  • Whip the butter and Brie until it's pale and creamy and looks like butter. This will take around 1 to 2 minutes, depending on how powerful your food processor is.
  • Scrape the whipped brie butter into a bowl and drizzle in runny honey and chopped pecans.
  • Serve with sourdough crostini or sourdough French bread.

Notes

Other Topping Ideas for Whipped Brie Butter:
  • Drizzle in extra virgin olive oil and fresh herbs. Fresh thyme, dill, parsley and chives all work really well. A little sprinkle of salt crystals is welcome here too!
  • Warm some fig jam just a little and spoon onto the top of this Brie cheese recipe. Add some toasted walnuts or chopped pecans and a sprinkling of black pepper.
  • For a spicy version, drizzle your brie butter in hot honey and chopped jalapeños. A drizzle of chili olive oil is nice too!
  • A beautiful variation to this recipe is using a wild flower honey to drizzle over the top and then sprinkling with some crushed lavender flowers and a little salt. So special!
