Ingredients

  • Sourdough Pizza Dough - I've used my master sourdough discard pizza recipe with active sourdough starter as the base for this sourdough strawberry pizza, but you can use discard and yeast if you prefer.
  • Cream Cheese - block cream cheese, softened at room temperature.
  • Vanilla Paste - I recommend using vanilla paste rather than vanilla extract for a sweeter, creamier vanilla flavor.
  • Strawberries - I've used fresh strawberries, sliced with the tops removed.
  • Sugar - I've used 3 types of sugar to create this recipe - white sugar, granulated sugar and brown sugar. Just a little of each one to develop the perfect level of sweetness in this sourdough dessert pizza.
  • Lemon Juice - the acid in the lemon juice will stop the strawberries from losing their color when baking.
  • Rolled Oats - you'll need traditional rolled oats, not quick oats to create the crumble topping.
  • Pecans
  • Cinnamon - just regular ground cinnamon.
  • Butter - I've used salted butter as always, but you can use unsalted butter if you prefer.
  • All Purpose Flour

How To Make Sourdough Strawberry Crumble Pizza

Before creating your sourdough strawberry crumble pizza, you'll need to assemble the ingredients.

Sourdough Pizza Dough - stretch and shape a portion of sourdough pizza dough into a round. Place onto a pizza peel with plenty of semolina flour to ensure it doesn't stick. I recommend 250g of pizza dough.

Vanilla Cream Cheese - mix the cream cheese and vanilla paste together and stir until smooth. You can whip it in a stand mixer with a whisk attachment or just use a fork to mash it altogether.

Marinated Strawberries - slice the strawberries and place into a bowl along with the lemon juice. Make sure all the strawberries are covered in lemon juice before adding the sugar and stirring thoroughly to ensure all the strawberries are coated. Set this aside for at least 10 minutes for the strawberries to marinate and leech out some of their juices.

Brown Sugar Crumble - Place all of the crumble ingredients into a food processor and blitz until it resembles wet sand. Place into the freezer until you're ready to top your pizza. If you want to make this by hand, mix the dry ingredients together and then rub cold, grated butter into the dry ingredients (like you're making sourdough biscuits).

When you're ready to cook your pizza, you'll need preheat your oven (I've used a wood fired pizza oven to cook this pizza but you can cook this in a home oven, wood fired oven or gas fired pizza oven). I recommend 230C to 250C (450F to 480F) for a home oven.

You want to cook the pizza straight away without letting it sit because the strawberries are very wet and will seep into the pizza dough making it wet and soggy so wait for the oven to get to temperature before assembling your pizza.

Assembling The Pizza - To make the sourdough strawberry crumble pizza, start by spreading the base with the vanilla cream cheese, then spread the marinated strawberries over the top (squeezing them out gently before adding), following by an even sprinkling of the brown sugar crumble.

Cooking The Pizza - Cook your pizza in your preferred oven until it's golden and bubbly. The strawberries should be jammy and sourdough pizza dough puffy and golden. Remove from the oven and allow to cool a little before topping with vanilla ice cream and slicing up into 6 to 8 slices. Enjoy!

Kate's Recipe Tips

  • When making the brown sugar crumble for this recipe, make double or even triple and keep it in a zip loc bag or jar in the freezer. Then, you've always got a stash of crumble to quickly make this pizza whenever the craving hits! It's the perfect quick dessert at the end of a pizza party with friends.
  • If you don't have strawberries, blueberries and peaches can be treated in the same way to make the fruit component of this pizza.

How to Store + Freeze

I don't recommend storing this pizza once it's cooked. It's best baked and eaten warm and fresh. Once it sits for too long, the strawberries will make the base too soggy.

You can however freeze sourdough discard pizza dough, so you could potentially have frozen bases and frozen brown sugar crumble topping ready to go when the cravings hit.
