This recipe was created when I wondered what would happen if I blended equal amounts of really crumbly cheddar cheese with creamy butter. Let me tell you, what I created was absolutely delicious and I just had to share it with you! It's just so easy but makes such a statement alongside a crusty loaf of sourdough bread or plate of crostini and a little pot of jam. Honestly, it's going to change your life!!

This cheddar butter is really good served with sourdough crostini and tomato chutney, or alongside a cheese board. It's great for snacking or throwing together for last minute get togethers.

- Butter - Salted butter works best here, as it enhances the savory flavor of the cheddar. You can also use homemade butter. Let it soften slightly so it blends smoothly.
- Cheddar Cheese - Use a good-quality, crumbly cheddar. Sharp or mature cheddar gives the most flavor and whips beautifully into the butter.

How to Make Cheddar Butter
Take the butter out of the fridge around 10 minutes before you want to make this recipe.
Once the butter has softened a little, chop the butter and cheddar cheese into chunks and add it all to your food processor (don't try this in a stand mixer as it's not strong enough to whip the cheddar cheese).

Whip the butter and cheddar cheese until it's luscious and creamy and looks like butter. This will take around 1 to 2 minutes, depending on how powerful your food processor is. The color it turns will really depend on the type of cheddar you use, it could be anywhere from pale yellow to bright orange.

Scrape the whipped cheddar butter into a bowl and serve with sourdough crostini or sourdough French bread.

How to Store + Freeze
Store cheddar butter in an airtight container in the refrigerator for up to one week. Let it sit at room temperature for a few minutes before serving so it softens and spreads easily.
You can also freeze cheddar butter. Transfer it to a freezer-safe container or shape it into a log and wrap tightly. Freeze for up to 2 months. Thaw overnight in the refrigerator before using.
