Sourdough S'mores Banana Bread

Banana Bread but better - if you love my sourdough discard banana bread recipe, then you are going to love this one! It's full of the banana flavor you love but elevated with crunchy sourdough graham crackers, smooth Hershey's chocolate pieces and gooey marshmallows!
Delicious Dessert - this sourdough s'mores banana bread makes a delicious dessert, served warm and topped with vanilla ice cream.

Ingredients
- Bananas - I've used approximately 3 overripe bananas to create this recipe.
- Eggs - my eggs are quite large (60g to 70g), so if yours are smaller, I recommend increasing to 3 eggs.
- Butter - as always I've used salted butter, but you can use unsalted if you prefer. Must be melted and cooled slightly. I pop the butter in the microwave when I first start making it and then it sits and cools and is ready when I need it.
- Sourdough Starter - you can use bubbly, active sourdough starter or sourdough discard, whatever you have on hand.
- All Purpose Flour
- Cocoa Powder - nothing fancy here, I've just used supermarket brand cocoa powder.
- Baking Powder
- Sugar - I've used a mix of both brown and white sugar.
- Salt - just a little to balance out the flavor.
- Graham Crackers - I've used sourdough graham crackers but you can use store bought crackers if you want to.
- Hershey's Milk Chocolate Pieces - I've used 3 bars of Hershey's Milk Chocolate to create this recipe. I broke up 2 bars and mixed into the sourdough banana bread itself and then used the third bar to garnish the top.
- Marshmallows - I've used white marshmallows cut into quarters for the banana bread itself and then cut them in half for the top of the sourdough s'mores banana bread.

How To Make Sourdough S'mores Banana Bread
Preheat oven to 180C/350F. Grease a loaf pan with butter and set aside.
Mash the overripe bananas with the back of a fork until they are fairly smooth (a few lumps is fine).
Now add the eggs and vanilla extract to the bananas and whisk through until well combined, followed by the melted butter.
Now add the sourdough starter to the egg mixture and mix throughly. Set aside.
In a separate bowl, mix the white sugar, brown sugar, all purpose flour, baking powder, salt, cocoa powder and Hershey's pieces and ensure that everything is mixed thoroughly.

Now add the dry ingredients to the wet ingredients and stir until just combined.

Pour the mixture into the pan you prepared earlier. Top the banana bread batter with the remaining marshmallows, graham crackers and Hershey's pieces.

Bake at 180C/350F for around 1 hour. Baking time will depend on the size of your pan and your oven. The sourdough s'mores banana bread is cooked when a skewer is inserted and comes out clean.
Allow to cool for 30 minutes before removing from the pan and transferring to a wire cooling rack to cool completely. I recommend cooling fully for easier slicing.

How To Store + Freeze
This sourdough s'mores banana bread is best eaten once cooled and sliced. Cooling first allows you to slice it much easier than when it's warm (but of course this is totally up to you, eat it straight out of the oven if you want to).
I've found this recipe stays fresh for up to 3 days. It's not quite as long lasting as other banana breads because of the marshmallows.
I don't recommend freezing this sourdough s'mores banana bread as the freezing process can mess with the marshmallows.

Equipment
- Loaf Pan (I've used a 1 pound USA pan)
Ingredients
- 200 g Bananas (approx. 3 medium overripe bananas)
- 2 Eggs (mine were approx. 60g each)
- 80 g Butter (melted - can be salted or unsalted)
- 100 g Sourdough Starter (discard or fed & bubbly)
- 200 g All Purpose Flour
- 30 g Cocoa Powder
- 12 g Baking Powder
- 100 g Brown Sugar
- 50 g White Sugar
- 3 g Salt
- 70 g Graham Crackers (I've used sourdough graham crackers)
- 86 g Hershey's Milk Chocolate Pieces (2 bars broken into pieces)
- 70 g Marshmallows (either mini marshmallows or larger ones chopped up)
Topping
- 30 g Graham Crackers (I've used sourdough graham crackers)
- 43 g Hershey's Milk Chocolate Pieces (1 bar broken into pieces)
- 30 g Marshmallows
