I don't know about you, but I absolutely LOVE baking with blueberries! I think it's because I can use fresh blueberries when they're in season (hello summer), but also frozen when they're not.

And there’s just something magical about the combination of tangy sourdough and sweet, juicy blueberries. Whether folded into a fluffy sourdough pancake, nestled in a rustic loaf, or baked into a tender sourdough muffin, blueberries bring a burst of freshness that perfectly balances sourdough’s complex flavor.

Blueberries and sourdough are such a perfect match. I think this is because summer not only brings us blueberries, but it also makes my sourdough starter bubble so much more! It just loves the summer warmth and so I end up with an abundance of both blueberries and sourdough starter! It would be a shame not to marry them together, right?

In saying that, I'm not afraid to use frozen or even dried blueberries when I don't have any fresh blueberries on hand, or when they're simply too expensive in the winter months. I love the dried blueberries from Aldi (I always have a few packs in the cupboard) and frozen blueberries are a staple in my freezer too!

Kate's Recipe Tips

  • When using blueberries in your sourdough baking, particularly discard recipes, it's generally ok to use fresh or frozen blueberries. When making sourdough bread, I recommend fresh or dried blueberries as frozen are too wet when they defrost and can make a big mess during fermentation.
  • When using fresh or frozen blueberries in scones and muffins, it's a good idea to coat them in some of the dry flour mixture before adding to the wet ingredients to try to prevent them from sinking to the bottom of the pan during baking.
