The truth is, most of the time, sourdough starter and sourdough discard are interchangeable. Sourdough discard is just unfed sourdough starter, so of course, they are mostly interchangeable, depending on the application.
More often than not, if you attempting a sourdough discard recipe, you can use either fed or unfed starter with no real consequences. If you are making sourdough bread, you should always aim to use active, bubbly sourdough starter.
